Role Overview

This is a senior leadership position ideal for an experienced professional with a deep passion for the meat industry. As Butchery Store Manager, you will take full ownership of daily operations at our premium biltong shop while providing occasional hands-on support at the sister butchery. This high-visibility role demands a blend of expert meat knowledge, retail acumen, team leadership, and customer-centric focus.

Key Responsibilities

Your core duties will encompass end-to-end store management, with a strong emphasis on quality control, profitability, and team performance:

  • Meat Expertise & Product Handling: Leverage in-depth knowledge of meat cuts, grading, curing processes (especially for biltong and droëwors), portioning, and preparation. Ensure all products adhere to the highest quality standards, from fresh arrivals to final display.
  • Stock Management & Merchandising: Oversee stock receipt, FIFO rotation for optimal freshness, inventory tracking, and visually appealing displays that drive impulse purchases and enhance the customer shopping experience.
  • Customer Service Excellence: Deliver personalized, professional service in-person, over the phone, or via email/WhatsApp orders. Handle inquiries, custom requests, complaints, and feedback with tact and efficiency to build loyalty and repeat business.
  • Administrative & Financial Oversight: Manage invoicing, quotations, purchase orders, pricing strategies, gross profit calculations, and accurate record-keeping. Monitor daily takings, banking, and reporting to support informed decision-making.
  • Supplier & Stakeholder Liaison: Build strong relationships with suppliers for reliable deliveries, negotiate terms where possible, and resolve issues promptly. Collaborate with internal teams and the sister butchery for seamless operations.
  • Team Leadership & Development: Recruit, train, supervise, and motivate staff. Schedule shifts, conduct performance reviews, and foster a positive, high-standard culture aligned with company values.
  • Health, Safety & Compliance: Enforce rigorous hygiene protocols, food safety regulations (including HACCP principles), and health & safety standards to maintain our impeccable reputation.
  • Store Operations & Security: Handle opening/closing procedures, cash-ups, security checks, and general maintenance to ensure the store is always trade-ready and secure.
  • Sales & Performance Driving: Identify opportunities for upselling (e.g., pairings with sauces or sides), monitor key metrics like stock turnover and waste minimization, and contribute ideas for promotions or seasonal offerings.

Candidate Requirements

We are seeking a top-tier candidate who meets or exceeds the following:

Essential Qualifications & Experience:

  • Matric (Grade 12) or equivalent; a relevant qualification in retail management, hospitality, or meat technology would be advantageous.
  • Minimum 5 years’ hands-on experience in butchery, biltong retail, or premium food/meat industry, with at least 2-3 years in a managerial or supervisory role.
  • Proven track record in retail operations, stock control, and achieving sales targets.

Skills & Competencies:

  • Expert knowledge of meat products, including cuts, grading, biltong production, and preservation techniques.
  • Strong proficiency in English (spoken and written); Afrikaans would be a plus for local customer engagement.
  • Excellent interpersonal and communication skills to engage customers, motivate teams, and liaise with suppliers.
  • Leadership ability to operate independently while upholding high standards of service, hygiene, and profitability.
  • Detail-oriented with strong organizational and problem-solving skills in a fast-paced setting.
  • Basic computer literacy for admin tasks (e.g., MS Office, POS systems).

  • Able to work retail hours, including weekends, public holidays, and peak seasons (e.g., summer beach traffic).

Compensation & Benefits
